I created this recipe last year because my kids love mint chocolate chip ice cream and I wanted to try something different. I have seen many recipes for chocolate pudding using avocados as the base. I thought the mint flavor would be nice and it is naturally a beautiful green color. This recipe turned out great! You don’t even have to like avocados to like this recipe because the mint masks their flavor. This recipe is the perfect light and refreshing dessert!
Mint Chocolate Chip Pudding
1/3 cup honey or agave
1/4 tsp. vanilla extract
1/8 tsp. peppermint extract
2 Tbsp. dairy-free chocolate chips
Place avocado, sweetener, and extracts in food processor and blend until smooth. Stir in chocolate chips (do not blend). Serve garnished with more chocolate chips and mint leaves if desired.
