I LOVE pumpkin 🎃! Especially this time of year when it starts getting cooler and the leaves turn beautiful colors. There are so many ways to enjoy pumpkin, and today I would like share a super simple, quick, and easy recipe with you that I love to fix for a quick lunch. The whole recipe is only around 200 calories and it will fill your belly, so it’s great for those wanting to lose some weight. I love the flavor of pumpkin with curry… so yummy!
Pumpkin Soup (serves 1)
1 can pure pumpkin
1/4 c. non-dairy milk
1/2 tsp. curry powder
1/4 tsp. cinnamon
1/2 tsp. salt
Add can of pumpkin to a large microwaveable bowl. Fill the empty can with water and add to bowl. Add milk and spices and stir. Microwave until warm and stir well. Enjoy!
