As I said before, I love pumpkin! And I love sipping on a nice warm drink after the kids are in bed and I have time to relax. Here is my recipe for my own PSL. It’s way healthier and cheaper than Starbucks 🙂 . I like mine heavy on the pumpkin and light on the coffee. Feel free to adjust amounts to suit your own taste.
Pumpkin Spice Latte
1.5 cups non-dairy milk
2 heaping Tbsp. pumpkin puree
10 drops liquid stevia
3/4 tsp. instant coffee (I use organic decaf)
1/2 tsp. pumpkin pie spice
1/4 tsp. vanilla extract
Blend all ingredients together very well. I use my Nutribullet and this kind of whips it a bit also, which makes it a little foamy on top. Then pour into a mug and heat in microwave. Enjoy!
