This recipe is perfect for those that love peanut butter, but don’t want all the extra calories. I like to use powdered peanut butter sometimes because it blends quicker into smoothies, soups, and sauces. It’s also great for people that are trying to lose a few pounds because while peanut butter is healthy, it is very calorie dense. Powdered peanut butter is now found near the regular peanut butter in most stores. It is just dried and has some of the oils expressed, and you are left with a peanut flour. You will see I also sneak some greens into this smoothie. It does change the color, but I promise it won’t affect the taste. If you are new to putting greens in your smoothie, I recommend using spinach as it has a very mild taste and blends very smooth.
This recipe has all the flavors of a peanut butter cookie, but it is healthy enough for breakfast! Note- I used a NutriBullet and this fills one container completely.
Low Fat Peanut Butter Cookie Smoothie (serves 1)
1/3 c. frozen greens
1 frozen banana
2 Tbsp. powered peanut butter
2 Tbsp. instant oats
1 Tbsp. chia seeds
1/2 tsp. vanilla extract
1 1/3 c. non dairy milk
sweetener of choice if needed (I added about 7 drops of stevia)
Add all ingredients in blender and blend until smooth. Enjoy.
- Using the frozen greens and banana will make it frosty without having to “water it down” with ice.
