We used to love ordering fajitas in restaurants! They come out all hot and sizzling, but they would also come dripping in grease and oil. Definitely not a healthy food option! Problem solved…. make these at home, and its cheaper too 🙂
The trick to cooking these is to add just enough water while cooking to keep the veggies from from sticking to the skillet.
1-2 packages seitan, cut in strips
1 large onion, sliced
2 bell peppers, sliced
1 zucchini, diced
1 tsp cumin
1 tsp garlic powder
1 tsp chili powder
1/2 tsp oregano
1/2 tsp coriander
1/2 tsp salt
tortillas – look for oil-free corn or whole wheat
Add onion and peppers to skillet with just enough water to keep them from sticking to the skillet as you cook them. You will probably need to add a little at a time as it evaporates. Add all spices, and stir well. Once veggies are softened, add seitan and cook until warm and the veggies are as soft as you want them.
Put filling in tortillas and top with your favorite condiments. Salsa, pico de gallo, guacamole, lettuce, and diced onion are all good choices.
*If you like mushrooms you could always substitute them for the seitan. You can also add extra veggies as you like. Stewed tomatoes, yellow squash, broccoli, and cauliflower are also good in fajitas.
