I have always loved BBQ since growing up in the south. Here are 2 incredibly easy plant based ways to have BBQ on your table in no time. These pair well with all your favorite sides such as corn on the cob, baked beans, slaw, roasted veggies, potatoes, and more. These “recipes” are so easy it’s hard to even call them recipes! Here is my family’s favorite BBQ sauce… I look for a sauce that is vegan, doesn’t have high fructose corn syrup, and no funky ingredients. This one is our favorite because it is isn’t as spicy as some which my youngest appreciates and it has a great flavor.
1 block of extra-firm tofu, drained and sliced
Preheat to 400 degrees. First you will need to drain your tofu. I do this by setting it on paper towels on my cutting board and placing a pot on top for about 10 minutes. This will get most of the excess water out resulting in a much firmer tofu. Then cut the block in half and slice into 8 total slices. Place your slices on a parchment paper lined cookie sheet. This will keep it from sticking. Then top each slice with about a teaspoon of BBQ sauce and spread it around. Bake for about 12 minutes, and then flip them over and add about a teaspoon of BBQ sauce to the top and spread it around and bake another 15 min or so. You can add a little more sauce after baking if you like.
1 can of chickpeas, drained
2-3 Tbsp. BBQ sauce
Add chickpeas to a nonstick skillet and add sauce. Stir while cooking on medium heat until moisture is absorbed and it becomes nice and sticky.
My favorite is the chickpeas, but my kids like the tofu the best. These recipes are perfect for those new to plant based eating and are looking for a quick and easy way to replicate familiar flavors.
