Gingered Pear Oatmeal

Here is one of my favorite breakfasts during the winter. It’s harder to find good fresh fruit in the dead of winter, but I can usually always find good pears. I love the flavor of pears and they work great in oatmeal paired with the flavors of vanilla and ginger. This is a warm, filling, and healthy breakfast guaranteed to start your day off right.


Gingered Pear Oatmeal

1/2 c. quick cooking oats

1 c. water

1/3 c. non-dairy milk

1 pear, diced

1 Tbsp. ground flaxseed (can use chia)

1/4 tsp. vanilla extract

1/4 tsp. ground ginger

sweetener of choice,  I use 1 tsp. erythritol or 8 drops stevia

Combine the oats and water in a bowl and microwave for about 2 minutes. Then add the rest of the ingredients and stir till completely mixed. I like to add an extra splash of non-dairy milk on top after I stir it. Then, microwave about another 1 min. 45 sec. and enjoy!
