My family has made this kind of soup as long as I can remember and I wanted to remake it to be plant based as their version has meat. This version is just as good as the original, if not better. It reminds me of large family gatherings and my childhood, such good memories. Hope your family enjoys it as much as mine.
Cabbage and Vegetable Soup
1 small head cabbage, chopped in large pieces
2-3 carrots, sliced
1 can fire-roasted crushed tomatoes, 28 oz.
1 can french-style green beans, drained
1/2 c. bulgar wheat
1 bay leaf
1 Tbsp. vegan Worcestershire sauce
1 tsp. dried basil
1 tsp. dried oregano
1 tsp. garlic powder
1 tsp. onion powder
5 c. water or veg broth
1 tsp. salt
Add all ingredients into a large soup pot except salt. Simmer, covered, over low-medium heat for about an hour or until tender. Then add salt, stir and serve.
