Blueberry Almond Overnight Oats

As the weather warms up, I love having some nice and cool overnight oats in the morning. It’s also a big bonus that it’s so easy to make and then you have a nice grab and go breakfast waiting for you in the morning. Almond extract is what makes this breakfast taste special, if you’ve never tried it before you really need to. You have been missing out! Blueberries are loaded with antioxidants and most doctors recommend that a serving of berries be a part of your daily diet. Wild blueberries have 2x the antioxidants of regular blueberries. They are full of anthocyanin, a flavonoid with potent antioxidant capacities. It helps prevent cell damage from free radicals and makes blueberries a great cancer fighter.


Blueberry Almond Overnight Oats

1/2 c. oats

1 c. non-dairy milk

1 Tbsp. ground flax seed

1/2 tsp. almond extract

8 drops stevia, optional

1/2 c. blueberries

Combine all ingredients, stir and let sit covered in refrigerator overnight. In the morning you will have breakfast all ready to go!
