Lentil Tacos

Lentil tacos are a staple at my house. They are so quick and easy to make and everyone likes them. I even use canned lentils to make this meal super quick. You could always use about 3 cups of pre-cooked lentils instead.

Lentil Tacos

2 cans lentils, drained

1 Tbsp. ketchup

1 tsp. chili powder

1 tsp. cumin

1 tsp. smoked paprika

1 tsp. oregano

1/2 tsp. onion powder

1/2 tsp. garlic powder

1/2 tsp. salt

Add your lentils into a saucepan and use a potato smasher to smash them up a bit. You don’t want them pureed, but you do want to break them up a bit. Then add the ketchup and spices and heat through over medium heat while stirring.

That’s it! So simple and you don’t have any funky ingredients from using a seasoning pouch. Eat with tortillas, shredded lettuce, onion, avocado, and salsa.

Fun fact – purple/blue corn has more antioxidants than regular. I love these tortillas from Sprouts Market, and they are such a fun color! (and oil free!)
