Here is a great way to make your hummus oil-free while still being nice and creamy. Aquafaba (the liquid from canned chickpeas) is all the rage right now and it’s being used to make all kinds of neat things like meringue. It is perfect for using in hummus!
Oil-free Hummus with Aquafaba
1 can chickpeas, drained while saving liquid
2 squeezes of lemon juice
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 – 1/4 tsp. salt
1/4 tsp. smoked paprika
Combine all ingredients in your food processor. Add about 1/4 c. of reserved aquafaba and blend until creamy. Add more aquafaba if needed.
This recipe is easily doubled! It is great for using as a dip, sandwiches, or in wraps.
