Potato salad is a must for pot lucks so I wanted to get this recipe out to everyone before Memorial Day. It’s great and fresh with the lemon zest and herbs and even oil free with homemade mayo. Here is a link to the mayo recipe I love to use. Just be sure to use dairy-free yogurt. I like Silk plain soy yogurt. This is the perfect side to your plant powered BBQ or grill out. It’s also great when made in advance too.
Lemon Herb Potato Salad
2 1/2 lbs. red potatoes, diced with skin on
1/2 c. homemade mayo, see link above
1 lemon, zest only
1 heaping Tbsp. parsley, chopped
1 1/4 tsp. dill
1/2 tsp. salt
Boil potatoes in water until tender, drain. Cool completely. Add mayo, lemon zest, herbs, and salt. Stir well to combine and refrigerate until ready to serve.
