This is a recipe creation that I did because of a special request from my son. I think he got the idea from TV or something. Anyway, it makes for a fun and kid friendly meal that is completely whole food plant based. It is made with whole grains, legumes, veggies, and it is oil-free. I usually serve mine over a baked potato for myself and the waffles for my kids! Using pre-cooked lentils will help this recipe come together in a flash, perfect for busy nights.
Sloppy Waffles
Sloppy Joe filling:
2 cans lentils, drained – or about 2 1/2 cups cooked lentils
1 small onion, chopped
1/2 c. diced bell pepper, I use red since it’s sweeter
1/2 c. ketchup
1 Tbsp. worcestershire sauce (vegan)
1 tsp. mustard
1/2 tsp. garlic powder
Saute onion and pepper in the bottom of a pot using small amounts of water to keep it from sticking to the bottom. When veggies are tender add all other ingredients, stir, and warm throughout.
Waffles:
1c. whole wheat pastry flour
1c. non-dairy milk
2 tsp. baking powder
1/4 tsp. salt
Stir all ingredients together and cook in a waffle maker. This recipe makes 2 large waffles in my waffle maker.
