Red Velvet Smoothie

I made this smoothie at the spur of a moment one day and I am so glad I wrote down what I did because it turned out fantastic! I had some frozen beet strips in the freezer and when I was deciding what kind of smoothie I wanted I wondered how I could incorporate them in. This creation is what followed. I decided to add cocoa to make it red velvet flavored and cashews for the cream cheese frosting flavor. It was delicious and is one of my new favorites!


Red Velvet Smoothie

1/3 frozen kale, or other green…

1/3 c. frozen cut beets

1 1/2 frozen banana

stevia, 9 drops

1/2 tsp. vanilla extract

1 Tbsp. cocoa powder

2 Tbsp. cashews, soaked

1c. non-dairy milk – I used almond

Place all ingredients in a blender and blend until smooth. Enjoy!

  1. Do you have to blanche the beets prior to freezing? What do you do with the beet greens at the time you are freezing the beet roots?
