Peanut Noodle Lettuce Boats

I love to eat these in the summer! They are so yummy and fun to eat too! And of course quick and easy to make!

Peanut Noodle Lettuce Boats

2/3 of a 16oz. pkg. of whole wheat spaghetti

3 heads of romaine lettuce

1 bell pepper, chopped

2 Tbsp. peanut powder (PB2)

2 Tbsp. sweet chili sauce

1 Tbsp. peanut butter

1 Tbsp. soy sauce

3 Tbsp. non-dairy milk

1/4 tsp. minced ginger

1/4 tsp. garlic powder

1/4 tsp. coconut extract

Boil water and cook pasta following directions on label. Wash, dry, and tear off romaine lettuce leaves to make “boats” for your noodles. Add all ingredients from peanut powder through coconut extract to a small bowl and mix well. You may need to warm it in the microwave a tad to make it mix better. Add sauce to drained pasta and stir to combine. Add some noodles to each lettuce cup and sprinkle with the diced bell pepper.
