Lime Muffins

If you haven’t noticed from seeing my blog posts… I love lime! I was trying to decide what flavor of muffins to make one day and I was really wanting lime. I wasn’t able to find a recipe for any so I decided I needed to create one. With some trial and error this is what I came up with. I really like them and hope you do too! They are whole grain and oil free just like all my recipes so you can feel good about indulging in them!

Lime Muffins

2 c. whole wheat pastry flour

1/2 c. coconut sugar

3 tsp. baking powder

1/2 tsp. salt

2 flax eggs*

1/3 c. non-dairy milk

1/2 c. applesauce

juice of 2 limes, about 5 Tbsp.

zest of 2 limes

1 tsp. vanilla extract

*To make your flax eggs mix a total of 2 Tbsp. ground flax seed with 6 Tbsp. water and let sit for a few min. – this will make your 2 flax eggs.

Preheat oven to 350 degrees. Mix all dry ingredients, then add all wet ingredients and stir until combined. Line a muffin pan with parchment paper muffin liners and fill 2/3 of the way with batter. Bake for about 22 min. or until a toothpick comes out clean. Enjoy!
