Caribbean Polenta and Black Beans

This meal is perfect for busy nights or when traveling and you need a simple recipe! It comes together easily and it tastes so good. I just love the tropical flavors in this dish!

Caribbean Polenta and Black Beans

2 cans of black beans, drained

1 tube of polenta, sliced into rounds about a 1/2 inch thick

2 c. diced mango

1 tsp. thyme, dried

1/2 tsp. onion powder

1/4 tsp. turmeric

1/4 tsp. allspice

1/4 tsp. salt

cilantro – for garnish

hot sauce, optional

Preheat oven to 350 degrees. Bake polenta rounds on parchment paper for 10 min. then flip over and bake another 5 min. While polenta is baking, put black beans in a skillet over medium heat and add all seasonings and mango. Stir until thickened and warm. When polenta is done, serve black beans over the top of the polenta rounds and garnish with cilantro and hot sauce as desired.
