I absolutely love this chickpea salad! It combines so many of my favorite flavors! It is so creamy and has lots of different textures and it is a little sweet…. so good! It is great eaten plain, or made into a sandwich or wrap. It would even be great scooped on top of a green salad.
Curried Chickpea Salad
2 cans chickpeas, drained
1 apple, diced
1 c. grapes, sliced
1 shallot, minced
3/4 c. (6oz) plain non-dairy yogurt
3 Tbsp. orange marmalade
1 1/2 tsp. curry powder
1/4 tsp. salt
2 Tbsp. pecans, chopped, OPTIONAL
Add chickpeas to a large bowl and gently smash them with a fork or potato masher. You don’t want them pureed, just broken up into pieces. Then add apples, grapes, and shallot to a large bowl. Add the yogurt, marmalade, curry powder, and salt on top and stir very well to combine. Stir in pecans if using.
