I absolutely love sweet potatoes. They are one of my favorite foods and this is a fun way to prepare them. I could make a meal off of them! Since we know that oil damages your endothelial cells that line the insides of your arteries, this is a healthy way to make them. The parchment paper keeps them from sticking to the pan. I have played around with different seasonings and this is our favorite combination.
Oil-Free Sweet Potato Fries
sweet potatoes, I use about 3-4 for my family of 4
Pre-heat oven to 425 degrees. Trim the ends off the potatoes. Then cut them in half along the “equator”, and slice into wedges. Line a baking sheet with parchment paper and place wedges on it. Toss them with wet hands to dampen the potatoes and then sprinkle seasonings over them. Toss to coat. No need to measure seasonings, it depends on how many fries to make and personal preference. Just eyeball a good sprinkling on them.
Then line in a single layer and bake for 20 min. Flip over and bake another 20 min. You can broil them for another 5 if you want them extra crispy. Enjoy your guilt-free fries!
