It’s pumpkin spice season! Either you love it or you hate it. I love it! Here is an easy way to make breakfast for the whole family (or to have leftovers) on these chilly mornings. Steel cut oats and pumpkin are so healthy for you, and the oats will keep you full till lunch.
Pumpkin Spice Oats – Crock pot version
1 cup steel cut oats
3 1/2 cups water
3 Tbsp. ground flax seed
1 1/4 cups pumpkin puree
1/2 tsp. cinnamon
1/2 tsp. pumpkin pie spice
1/4 tsp. salt
sweeten to taste with preferred sweetener, I use 35 drops stevia
1/2 tsp. vanilla extract
Add all ingredients and cook on low overnight. In the morning stir well and add non-dairy milk as desired.
Instant Pot version
Same ingredients as above, except add only 3 cups of water. Add all ingredients to instant pot and stir. Set to cook for 3 min. and do natural release. Enjoy!
Tip: You can set it when you wake up and it can cook while you get ready in the morning 🙂 You can even add all the dry ingredients the night before so you only have to add the wet ingredients in the morning.
