Tostadas

Ok. This is hardly even a “recipe”, but it is a great, quick weeknight dinner. All the taco and tostada shells at the store are loaded in oil. So when you are looking for a healthy alternative you will need to crisp up your own tortillas. Luckily, it is easy to bake corn tortillas in your oven at home. Here is how to do it: Lay the tortillas in a single layer, not touching, on a baking sheet that is lined with parchment paper (so they don’t stick). If they try to curl up you may need to place something on top to keep them down – a metal cooling rack works great. Then bake them at 350 degrees for about 10 minutes, flip them over and depending on how crisp they are getting set your timer for another 5 or 10 min. Keep checking on them and flipping them as needed until they are as crispy as you want them. I have found different brands will cook differently so just watch them closely. The brand that I like the best to crisp up is the Whole Foods brand corn tortillas. They are thin, which works better than a thicker tortilla.

corn tortillas, 1 for each tostada you want to make

1-2 cans fat-free refined beans

shredded lettuce

salsa

avocado

Cook tortillas as directed above so they are crispy. Spread a layer of beans on the tortillas and then top with lettuce, avocado, and salsa.

This is such a quick and easy dinner that is so yummy too!
