Ok, I know this sounds weird, but trust me on this! It’s so good I eat this several times a week as my after dinner snack/dessert. This recipe satisfies my sweet tooth in a very healthy way, and with CHOCOLATE. Of course it’s not something I would serve at a dinner party, but when you are looking for a quick and easy, guilt-free dessert… here is your answer! I hope you enjoy it as much as I do!
Chocolate Sweet Potato
1 medium to large sweet potato
2-4 tsp. cocoa powder, depending on size of potato (I like the extra dark/special dark powder best – it’s stronger flavor and darker color)
natural sweetener of choice, I like stevia
Wash and stab your potato with a knife a few times to allow steam to escape. Microwave for 4-5 minutes or until soft throughout. Peel your potato, add the cocoa powder and a few splashes of milk, and mash it all together with a fork until well mixed. Add milk as necessary to achieve desired consistency. Warm in the microwave for another 45 seconds and it’s ready. It tastes like a thick, warm chocolate pudding.
