Who needs Starbucks when you can make your own dairy-free drinks healthier and cheaper at home? Here is my peppermint mocha recipe, which I just love this time of year! Coffee and chocolate were made for each other and peppermint gives them a nice seasonal flavor. I sweeten my drinks with natural no-calorie sweeteners to cut down on my sugar intake in a healthy way. The flavor syrups at coffee shops are loaded in sugar and artificial flavors.
1 1/2 cups non-dairy milk
3/4 – 1 tsp. instant coffee
3 tsp. cocoa powder
1/4 tsp. vanilla extract
15 drops stevia
3-5 drops of peppermint extract, or 1 drop peppermint oil
Optional toppings: crushed peppermint candy, few chocolate chips, mini-vegan marshmallows
I recommend blending all ingredients well and then pouring into a large coffee mug to warm in microwave. The blender works as a frother and after warming it up, your drink will have a nice layer of foam on top.
